What You’ll Need:
- Skillet
- Spatula
Instructions:
Step 1:
Wash & dice your bell pepper. Cut & dice your onion. Set to the side.
*You may use as much or as little pepper and onion that you prefer in this recipe.
Step 2:
In a skillet, brown the sausage and mix in your preferred seasonings.
I used Salt, Pepper, Red Pepper, Onion powder, Garlic Powder, Creole, and Franks Original Red Hot seasoning – no specific measurements, just eyeballed amounts.
Step 3:
Add in the diced peppers + onions and stir frequently.
Step 4:
Turn the heat to medium and with your spatula, move the meat + vegetable mix to one side of the pan. On the opposite side, crack 1-2 eggs – or however many you prefer – sprinkle with some salt + pepper and scramble until cooked.
Step 5:
Once the eggs are done and the meat is cooked thoroughly, mix everything together in the pan.
Step 6:
Place a hearty serving in a bowl, top with some of your favorite shredded cheese – I use the shredded mexican blend cheese. And enjoy!
Optional:
For those like my husband who prefer a their hash brown bowls with some heat, top with a healthy drizzle of Siracha or your favorite hot sauce.
