Ingredients:
- 2 1/4 Cups All Purpose Flour
- 1 Tablespoon Baking Powder
- 3 Tablespoons Sugar
- 1/2 Teaspoon Salt
- 1 Teaspoon Cinnamon
- 2 Large Eggs Separated
- 1/2 Cup Vegetable Oil
- 2 Cups Milk
- 1 Teaspoon Vanilla Extract
- Chocolate Chips
Toppings:
- Creamy Peanut Butter
- 1 Banana per waffle
- Granola of Choice
- I used Oat & Honey granola for this recipe
- Cinnamon
- Maple Syrup
What You’ll Need:

Large Mixing Bowl
Instructions:
Step 1:
Preheat your waffle iron, spray with non stick cooking spray and set aside.
Step 2:
In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
Step 3:
In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
Step 4:
In a separate medium bowl mix together the egg yolks, vegetable oil, milk, and vanilla extract.
Step 5:
Add the egg yolk mixture to the dry ingredients and mix well.
Step 6:
Fold in the egg whites slowly with a rubber scraper or large spoon.
Step 7:
Pour the batter onto your hot waffle iron, top with chocolate chips, and cook according to manufacturer’s directions.
Step 8:
Once cooked, spread your preferred amount of creamy peanut butter on the top of the waffle.
Step 9:
Slice a banana and place on top of your waffle.
Step 10:
Sprinkle some cinnamon and granola of choice, I used oat & honey, over top.
Step 11:
Drizzle with syrup and serve immediately.
Optional:
- For an extra sweet treat, shake some powdered sugar once all the toppings are added and finish with a dollop of whipped cream.
Notes:
I highly recommend getting a fun mini waffle maker for your littles so they can join in on the fun! My daughter loves Pokemon so we got her this Squirtle Waffle Iron and it has definitely made breakfast more enjoyable for everyone!
