Easy Weeknight Korean Beef Bowl Under 30 Minutes

1. Use lean ground beef

Opt for 85–90% lean ground beef to avoid excess grease, but still keep things flavorful and juicy. But this recipe I recommend using 80/20 for more optimal flavor. If using fattier beef, be sure to drain the excess fat after browning.

2. Don’t skip the garlic and ginger

Fresh minced garlic and ginger bring the bold, authentic flavor that makes this dish shine. You can substitute with garlic/ginger paste in a pinch, but fresh is best!

3. Adjust sweetness to taste

Traditional Korean beef often has a sweet-savory balance. Start with less brown sugar and add more as needed depending on your preference.

4. Add some heat

A spoonful of gochujang (Korean chili paste) or a pinch of red pepper flakes gives this dish a nice kick. Totally optional, but highly recommended if you like a bit of spice!

5. Serve with texture and color

Top your bowl with chopped green onions, sesame seeds, or even a fried egg for extra richness. Steamed broccoli, shredded carrots, kimchi or cucumber slices make great sides for freshness and crunch.

6. Make it ahead

The beef mixture stores well in the fridge for 3–4 days and freezes beautifully. It’s perfect for meal prep—just reheat and serve over fresh rice!

7. Swap the rice

No rice? No problem! Try it over cauliflower rice, noodles, or even in lettuce wraps for a low-carb twist.

Ingredients
  

  • 1 pound ground beef (80/20 works the best)
  • 2 tbsp soy sauce
  • 1 Tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tsp ginger minced
  • 2 green onions, chopped
  • Salt and pepper, to taste
  • 2 cups cooked rice jasmine Or basmati, or brown rice
  • Optional topping: sesame seeds

Instructions
 

  • Rinse 1 cup of rice under cold water until the water runs clear. Combine with 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.
  • In a large skillet over medium-high heat, add the ground beef. Use a spatula to break it apart as it cooks. Brown until it’s no longer pink, about 5-7 minutes.
  • Drain any excess fat, then add the minced garlic and ginger. Cook for an additional 1-2 minutes until fragrant.
  • Stir in the soy sauce, sesame oil, and chopped green onions. Then season with salt and pepper, to taste. Simmer for a couple of minutes to allow the flavors to blend together.
  • Next, spoon a generous amount of cooked rice into the bottom of your bowl and top the rice with your seasoned ground beef mixture.
  • If you’re including any extra vegetables, add them on top or around the beef.
  • Finish with a sprinkle of sesame seeds, chopped green onions, and any other toppings you prefer. Serve & enjoy!
