Start by finely chopping your onion and jalapeño. Slice your lime in half and set to the side.
In a medium serving bowl, combine the chopped onion, jalapeño, half your freshly squeezed lime juice and salt + pepper to taste. Let it marinate for about 5 minutes while you chop the tomatoes and cilantro.
Add the chopped tomatoes and cilantro to your bowl and stir until combined. Taste, and add more salt if the flavors don’t quite sing.
To achieve the best flavor, let your mixture marinate for 15 minutes or prepare ahead of time to let it sit for several hours in the refrigerator. Serve and enjoy!
