Creamy Red Pepper & Chicken Pasta

Think perfectly grilled, juicy chicken atop a bed of pasta drenched in a luscious, creamy sauce, all with just the right kick of spice. It’s a surefire hit that’ll have everyone asking for seconds!

Cook Time: 24 minutes


Ingredients:

  • 2 Chicken Breasts
    • Salt
    • Pepper
    • Onion Powder
    • Garlic Powder
    • Paprika
  • 1/2 Cup Heavy Cream
  • 6oz (or more) Penne Pasta
  • 1 Bell Pepper (assorted/ I used red for this recipe)
  • 1 tbsp Cajun Seasoning
  • 2 tbsp Tomato Paste
  • Parsley (dried or fresh)
  • Chives (dried or fresh)
  • Salt/ Pepper

Optional:

  • Sprinkle some parmesan or cheese of your choice for a little more flavor.
  • Pair with a side of garlic bread and/ or a nice side salad of choice.
  • Top with some fresh basil leaves for a pop of color & fragrance.

Instructions:

Step 1:

Wash the pepper, remove the seeds & slice into thin rows or dice into small squares.

Step 2:

Heat a drizzle of oil in a pan over medium-high heat. Take a fork and poke holes all over the chicken breast. Then season the chicken breast with salt, pepper, onion powder, garlic powder, paprika, and half of the cajun seasoning. Measure with your heart for the seasonings!

Step 3:

Add the chicken & cook undisturbed for 5-8 min. Flip & cook for another 5-8 minutes or until the chicken is fully cooked through. You can also cook the chicken using a standard outdoor grill or an indoor George Foreman grill – whatever method you choose! Transfer to a cutting board.

Step 4:

To the same pan, add another drizzle of oil, the lighter slices of green onion & the sliced bell peppers. Season the vegetables with the remaining cajun seasoning. Sauté for 3-4 minutes on medium heat or until softened.

Step 5:

Add the tomato paste & carefully cook for 1 minute until it browns slightly.

Step 6:

Add the pasta & enough water to fully cover the pasta & vegetables. Mix, then season with salt & bring the water to a boil. Lower to a simmer & cook the pasta for 8 minutes, stirring occasionally.

Step 7:

Meanwhile, slice the chicken.

Step 8:

Once the water has reduced, add the heavy cream to the pasta. Stir & cook for 1 minute until the sauce has thickened. Top with parsley & chives.

Step 9:

Add the sliced chicken, serve & enjoy!
