You may use any type of nut butter you prefer: I used all natural peanut butter as that’s my kiddo’s favorite – any kind works

Use old-fashioned oats for structure: Rolled oats give your bars a hearty texture and help them hold together when baked—instant oats tend to make them too soft and crumbly.

Thicken the blueberry layer: Toss berries with a little cornstarch before layering to ensure a jammy filling that doesn’t seep into the crust or turn soggy.

Let bars cool completely before slicing: Patience pays off—this helps the flavors settle and the bars hold their shape when cut. Chill briefly in the fridge if needed.

Watch browning and bubbling as bake nears end: If the top crust starts to get too dark, tent the pan with foil to prevent over-browning while the filling finishes baking.

Add a hint of sweetness: Dust some powdered sugar over top for an extra hint of sweetness to enjoy.

This Chocolate Chip Banana Bread is perfectly moist, rich with banana flavor, and dotted with melty chocolate chips in every bite. It’s an easy, family-favorite recipe that makes a cozy breakfast, snack, or sweet treat any day of the week.

Equipment

  • 7×11 or 8×8 baking dish
  • Cooking oil spray

Ingredients
  

  • 2 bananas
  • 1 1/2 cups rolled oats
  • 2 Tbsp nut butter, *I used natural peanut butter
  • 1 cup fresh blueberries
  • Sprinkle of cinnamon, optional

Instructions
 

  • Preheat your oven to 350°F.
  • In a lightly sprayed 7×11 or 8×8 baking dish, mash the 2 bananas well with a fork or potato masher. Add the remaining ingredients (1 1/2 cups rolled oats, 2 Tbsp nut butter, 1 cup blueberries) and stir it all together until throughly combined.
  • Press the mixture down creating an even, smooth surface. It should be about an inch thick.
  • Optional Step – Sprinkle cinnamon over the top for an extra flavor kick.
  • Cook in your preheated oven for 25 minutes.
  • Allow time to cool, then serve and enjoy!
