Kelly’s Kitchen Tip’s

Tips for Perfect BBQ Chicken Quesadillas

  • Warm tortillas first: Gently heating them makes them more flexible and less prone to tearing when folding.
  • Avoid overstuffing: Use about 2 tablespoons of filling per tortilla to keep them easy to flip and deliciously crisp.
  • Cook on medium heat: Too high heat burns tortillas before the cheese melts; medium ensures golden, crispy exteriors and gooey interiors.
  • Use minimal oil: Just a light coating from butter or oil is enough to create a golden crust without sogginess.
  • Use a non-stick pan or griddle if making many: This prevents sticking and makes flipping easier.

Toppings & Customization Ideas

  • Toppings after baking: Add pico de gallo, sour cream, guacamole, extra BBQ sauce, or cilantro for fresh flavor.
  • Customize fillings:
    • Add sautéed onions, bell peppers, black beans, or corn for texture, nutrition, and an extra burst of flavor.
    • Swap cheeses: Mexican blend, Pepper Jack, Monterrey Jack, or Colby Jack bring different flavor profiles. I love using Food Lion’s Spicy Mexican Cheese Blend as it is a ton of mixed cheeses, some with spice – like habanaro cheddar.
    • Use rotisserie or shredded chicken, even BBQ-seasoned rotisserie chicken to save time.
  • Add a spicy kick: Mix in diced jalapeños, pickled jalapeños, or even pineapple for a sweet-and-spicy twist.

Make-Ahead, Storage & Reheating

  • Prep ahead: Cook and mix the chicken filling in advance, then store in the fridge for up to 3 days.
  • Refrigeration: Keep assembled or cooked quesadillas in an airtight container for up to 3 days.
  • Freezing: Freeze cooled quesadillas individually in airtight bags or containers for up to 2 months.
  • Reheating:
    • Skillet or air fryer works best to restore crispiness.
    • Oven or toaster oven also works—especially great for reheating multiple at once.
    • Avoid stacking or covering quesadillas when reheating, as steam causes sogginess.
    • Microwaving is fast but can make tortillas soft—best to crisp afterward in a pan.
  • Chicken safety & storage:
    • Store cooked chicken in airtight containers in the fridge for up to 3–4 days.
    • Always reheat chicken to 165°F for food safety.
    • Leftover chicken can be frozen for 2–6 months.

  • 2 Tbsp butter
  • 1-2 Tbsp cilantro finely chopped
