Quick BBQ Chicken Quesadillas Recipe in Under 30 Minutes
Equipment
- Large Skillet/ Griddle
Ingredients
- 1 chicken breast
- 1/2 cup cheddar cheese or preferred cheese blend
- 4 medium/ large tortillas
- 1/4 cup barbecue sauce
- 1/4 red onion
- 2 Tbsp butter
- 1-2 Tbsp cilantro finely chopped
- 2 Tbsp pickled jalapeño – optional
Instructions
- Heat a drizzle of olive oil in a skillet or large frying pan over medium heat. Add the chicken breast & season with salt & pepper. Cook undisturbed for 5-7 min. Flip & season the second side with salt & pepper. Cook for an additional 5-7 min or until the chicken breast is fully cooked. Place the chicken on a plate & set aside to rest.
- Peel & thinly slice your red onion into long strips. Finely chop your cilantro & set to the side.
- Once the chicken has had a few minutes to rest, slice into bite sized pieces and place in a large bowl.
- Throw in your chopped cilantro and 1/4 cup bbq sauce & mix until the chicken is thoroughly coated.
- In a non-stick pan over medium heat, add one tortilla. Layer on half of the cheese, half of the onion slices & the chicken on one half of the tortilla.
- Add the remaining onion slices & pickled jalapeños (optional). Top with the remaining cheese & fold your tortilla over. Cook until browned & crisp on the outside and the cheese is fully melted.
- Slice your quesadilla accordingly and serve with an extra side of bbq sauce, sour cream or a little Homemade Salsa Fresca and enjoy!
