1. Crisp up those potatoes:

For that signature texture, make sure your potatoes are well-seasoned and crispy. Toss them in oil and spices, then roast or air-fry until golden. You can also pan-fry if you’re going for that authentic fast-food crunch.

2. Use a creamy, melty queso:

The cheese sauce makes or breaks this burrito. Use a store-bought queso you love or melt together Velveeta with a splash of milk and canned diced green chiles for a smooth, Taco Bell-style queso.

3. Don’t skip the layering:

Start with queso, then add beef, then potatoes—this layering helps everything melt together when you roll it up and heat it. A little extra queso on top before rolling never hurts either.

4. Toast the burrito:

After wrapping, place the burrito seam-side down on a hot skillet with a pat of butter for a minute or two. This seals it and gives the outside a slight crisp, just like they do at Taco Bell.

5. Customize it:

Want it spicier? Add jalapeños or use spicy queso.

Want it vegetarian? Skip the beef and double up the potatoes and cheese.

You can also add sour cream, chipotle sauce, or even a handful of shredded lettuce for extra crunch.

6. Wrap it tight:

A large, warm tortilla is key. Warm it in the microwave for 15–20 seconds before rolling to keep it pliable and prevent tearing.

Remember when Taco Bell used to have the beloved Cheesy Beefy Potato Burrito and then ripped it from our tastebuds?! Well not to fear, because here's how you can make your very own right in your kitchen.

Equipment

  • Skillet
  • Olive Oil

Ingredients
  

Ground Beef + Seasonings

  • 1 lb Ground Beef
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Creole seasoning
  • 1/4 tsp Cumin
  • Dash of Ground Red Pepper
  • Salt + Pepper, to taste
  • Fresh, Diced Onions, optional, to taste
  • 1/2 tbsp Olive/ Cooking Oil

Hash Brown Seasonings

  • 2 cups Frozen Southern Style (Diced) Hash Brown Potato's
  • 2 tbsp Olive/ Cooking Oil, use more as needed
  • 1/2 tsp Paprika
  • 1/2 tsp Cajun
  • 1/4 tsp Oregano
  • 1/4 tsp Garlic Powder
  • Fresh, Diced Onions, optional, to taste
  • Salt + Pepper, to taste

Remaining Ingredients

  • 1/2 cup Yellow Queso of Choice, to taste, use more as needed
  • 1/2 cup Sour Cream, to taste
  • 4 Large Flour Tortilla's
  • 2 tbsp Butter

Instructions
 

  • Start by prepping your skillet for the hash browns over medium-high heat and roughly 1-2 tbsp of your preferred cooking oil.
  • Let that pan get hot while you season your ground beef (with 1/4 tsp Garlic Powder, 1/4 tsp Onion Powder, 1/2 tsp Creole, 1/4 tsp Cumin, a healthy dash of Ground Red Pepper, and Salt + Pepper to taste) in another skillet with a drizzle of oil. Cook over Medium-High heat until browned and drain.
  • Once your potato skillet is hot, pour in your hash brown potato's and season (with 1/2 tsp Paprika, 1/2 tsp Cajun, 1/4 Oregano, 1/4 tsp Garlic Powder, Salt + Pepper to taste, and diced fresh onions – if you choose). Cook for about 10-15 minutes, until crisp – tossing occasionally.
  • Once your beef & potato's are cooked, prep your tortillas by popping them in the microwave for 30 seconds on a microwave safe plate, covered by a damp towel. (This helps steam your tortillas so they more easily roll & fold). Heat a pat of butter on a clean skillet.
  • Spread a healthy amount of sour cream on your tortillas, followed by beef, potatos and top with some of your queso (heat in the microwave for roughly 30 seconds before adding on) and roll, burrito style by tucking the edges in and place on your buttered pan. Lightly toast all sides of your burrito to help seal the burrito and add a bit of crispy crunch. Grab any sauces you may want for dipping and enjoy!
