If you thought Rice Krispie treats couldn’t get any better, let me introduce you to their ultimate upgrade—Homemade Oreo Rice Krispie Treats. Soft, chewy marshmallow bars are packed with chunks of chocolatey Oreo cookies, creating a cookies-and-cream dream that’s perfect for parties, bake sales, or a quick no-bake dessert fix. This is one of my husbands all-time favorite sweet treats so its quickly become a household staple. They come together in just minutes with simple pantry staples, but the flavor (and fun) makes them feel like a special occasion. Bonus: they’re easy enough for kids to help make—and even easier to devour.

Kelly’s Kitchen Tip’s
Use fresh, mini marshmallows – Older marshmallows can get dry and won’t melt as smoothly, so fresh ones make for extra soft and gooey treats. Plus, mini marshmallows take a little less time to melt down.
Don’t overpack the pan – Gently press the mixture into the pan instead of firmly compacting it to keep the bars light and chewy.
Mix in some Oreos early, save some for the top – This ensures every bite has cookie pieces, but you also get that pretty, cookies-and-cream topping.
Add a drizzle – Melt a little white or dark chocolate and drizzle it over the cooled bars for an extra bakery-style touch.
Cut when slightly warm – It’s easier to slice clean bars before they cool completely, then let them set.

Oreo Rice Krispie Treats
Equipment
- 9X13-inch pan/ baking dish
- Parchment Paper
Ingredients
- ½ cup salted butter softened
- 20 ounces mini marshmallows
- 1 tsp vanilla extract
- Pinch of coarse sea salt
- 7 cups rice krispies or other brand cereal
- 20-24 Oreo cookies about 8-10 ounces, crushed
Instructions
- Begin by buttering the bottom and sides of a 9X13-inch pan or spray with cooking spray. Set aside.
- In a large saucepan, melt 1/2 cup butter on low or medium-low heat and let it cook until the butter begins to melt.
- Add in the marshmallows and cook on low, stirring constantly until the marshmallows are mostly melted. Don’t worry about getting it perfectly smooth, it’s perfectly okay if there are still some lumps left. Add the 1 tsp vanilla, pinch of salt and stir to combine.
- Remove the pan from the heat and add the rice krispies in slowly while stirring, then the crushed Oreos. Stir until evenly combined. Make sure to scrape up the bottom & edges of the pan really well to incorporate all the ingredients.
- Scoop the mixture into the prepared pan and press the mixture into the pan with lightly greased hands or a sheet of parchment paper. Be sure to use a gentle hand if you want them chewy, pressing down too hard will result in too firm of treats). Let cool before slicing into squares & enjoy!
