Some days, cooking feels like therapy… and other days, it feels like a race against the clock. Lately, life has been leaning a little more toward the fast lane, so I’ve been relying HARD on a few simple shortcuts that make dinner feel effortless without sacrificing flavor. If you’ve been craving easier nights in the kitchen, these three tricks might just become your new go-tos.

1. Pre-Marinated Chicken Breasts (But Make Them Your Own)

I love a good chicken marinade, but sometimes I just don’t have the time, or the dishes, to deal with it. Lately I’ve been grabbing plain chicken breasts, drizzling them with olive oil, and seasoning them right on the sheet pan with whatever blend I’m in the mood for.

Try these quick seasoning ideas:

  • Cajun seasoning + lemon
  • Garlic herb + olive oil
  • Lemon pepper + a splash of broth

The trick? Add a squeeze of citrus or a splash of broth before baking. It creates its own “pan sauce” with zero effort.

2. Frozen Veggies Are Your Best Friend

For the longest time, I thought frozen vegetables were a last resort. Wrong! They cook faster than fresh, they’re already prepped, and they taste just as good when seasoned right.

Lately, I’ve been tossing frozen broccoli or carrots into a hot skillet with:

They char beautifully and taste like you spent way more time than you actually did. Green beans also work great with this technique too (I’m just not a fan..lol).

Bonus points if you line the pan with parchment paper. That’s the real MVP on nights when I’m not trying to scrub anything.
