I have felt like a zombie, with no energy to spend an hour in the kitchen cooking after a long day. So these Sweet Chili Chicken Veggie Wraps have been a literal lifesaver for me and my family!

Ingredients
  

  • 2 cooked chicken breasts (grilled, baked, or rotisserie, shredded)
  • ½ cup sweet chili sauce
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1 cucumber, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • Olive oil
  • Salt & pepper
  • Optional: fresh herbs cilantro, mint, or basil
  • Optional: a squeeze of lime

Instructions
 

  • If cooking chicken, warm your skillet over medium-high heat.
  • Season your chicken breasts lightly with salt and pepper to taste and optional: 1/4 tsp cajun seasoning. Cook in a skillet with 1-2 tbsp canola or vegetable oil until golden and fully cooked (165°F). About 5-6 minutes on each side.
  • Let your cooked chicken rest for 5 minutes on a cutting board. Once your chicken has had time to cool and rest, thinly slice against the grain or shred.
  • Toss sliced chicken with ½ cup sweet chili sauce until coated.
  • Thinly slice your cucumber, bell pepper, and carrot into thin strips.
  • Warm the tortillas in a microwave for 15-30 seconds. This helps you shape and roll the tortilla more easily and reduces breaks in your wraps.
  • Assemble wraps with chicken, veggies, and any optional extras you prefer (shredded cheese, sliced avocado, fresh herbs, squeeze of lime).
  • Fold in sides, roll tightly, and cut in half diagonally.
  • Optional step BEFORE cutting the wraps: Warm 1 tbsp of butter over medium heat in a skillet and lightly brown on all sides until golden brown and warmed.
