Otherwise Known as, The Breakfast Sandwich That Ruined All Other Breakfast Sandwiches for Me
I’m just going to say it: once you make this sandwich, drive-thru breakfast is never going to hit the same again.
Especially when it features crispy homecooked bacon, a soft-scrambled (or fried, your call) egg, melty pepperjack cheese, all tucked into a buttery, flaky croissant. It’s got just enough kick from the pepperjack to wake you up, and the croissant makes it feel like you actually did something nice for yourself this morning — even if it only took ten minutes.
My husband is a big gas station breakfast sandwich lover, until I started making these for him. It was like a full blown Ratatouille moment for him after his first bite. So I started meal prepping a big batch of these most weekends, and they’ve become the thing my family actually gets excited to grab on their way out the door.
What You’ll Need
- Croissants (day-old works great, actually — more on that below)
- Bacon, thick-cut if you’ve got it
- Eggs
- Pepperjack cheese, sliced
- Butter
- Salt and pepper

Cook your bacon low and slow. I know it’s tempting to crank the heat so breakfast happens faster, but bacon cooked over medium-low heat renders more evenly and gets that deep, crispy texture without burning on the edges before the middle’s done. And nobody likes burnt, dry bacon!
Toast the croissant, don’t skip it. A quick minute or two, cut-side down in a dry pan (or with a light swipe of butter), keeps it from turning soggy once the egg and cheese hit it. It also adds a little textural contrast — crispy outside, soft and pillowy inside. Or if you prefer a more crispy & flaky croissant, pop it in the toaster for 1-2 minutes.
Melt the cheese onto the egg while it’s still in the pan. Lay the pepperjack slice right on top of the egg in the last 30 seconds of cooking and cover the pan with a lid for a minute. It’ll melt into the egg instead of sitting as a cold slab on top. Trust me, it makes ALL the difference.
Use day-old croissants if you have them. Fresh croissants are delicate and can get squished or fall apart when you’re building the sandwich. A day old, they hold their shape much better and still toast up beautifully.
Crack the egg into a ring mold or a small circle of foil if you want that perfect round egg that matches the croissant shape. Not required, but it does look nice for photos (or just for your own satisfaction). If you don’t have either on hand, let your pan heat up over medium-low heat for a few minutes, then slowly crack the egg over the pre-warmed pan and using a spatula, gently push the edges back, shaping into a circle.

Customization Tips
This sandwich is basically a blank canvas once you’ve got the bacon-egg-cheese formula down. Some ways to make it your own:
- Swap the cheese — sharp cheddar, provolone, or even a smoky gouda all work if pepperjack is too spicy for little ones at the table.
- Add a spread — a smear of chipotle mayo, avocado, or even a thin layer of fig jam (trust me) takes it up a notch.
- Go veggie — sautéed spinach or a couple of avocado slices are a great way to sneak some greens in without anyone complaining.
- Turn up the heat — a few dashes of hot sauce or a spoonful of pickled jalapeños if your family likes things spicier than the pepperjack already brings.
- Make it a “everything” situation — a sprinkle of everything bagel seasoning on the buttered croissant before toasting adds a nice crunchy, savory edge.
Meal Prep & Storage Tips
This is the part that makes this recipe a real weekday lifesaver.
To meal prep: Cook a big batch of bacon and eggs (I like doing scrambled eggs in a sheet pan in the oven for this — way faster than standing at the stove for six eggs one at a time). Assemble the sandwiches fully, cheese and all, then let them cool completely before wrapping.
To store: Wrap each sandwich individually in foil or parchment paper, then place them in a freezer bag or airtight container. They’ll keep in the fridge for up to 4 days, or in the freezer for up to 2 months.
To reheat from the fridge: Unwrap and microwave for 60-90 seconds, or pop it in a 350°F oven for about 10 minutes if you want the croissant to crisp back up.
To reheat from frozen: Let it thaw in the fridge overnight, then follow the reheating steps above. In a pinch, you can microwave straight from frozen — just add an extra minute or two and check that the center’s warmed through.
One tip that makes a big difference: don’t add condiments (mayo, hot sauce, spreads) before freezing. Add those fresh after reheating so the croissant doesn’t get soggy in storage.

Bacon, Egg, and Pepperjack Breakfast Sandwiches
Ingredients
- 1 Egg
- 3 pieces of Bacon, thick cut works best
- 1 slice of Pepperjack cheese
- 1 Croissant, day old
Instructions
- Start by heating your pan over medium-low heat. Once warm, gently crack your egg over the pre-warmed pan and use a spatula to help push the edges back and maintain its shape. (Or if you have one of those fancy egg ring molds, use that!) Cook for about 2 minutes on each side or until fully cooked through. *If meal prepping, try the sheet pan method listed above in the Meal Prep notes.
- If you have a big enough pan, once your egg is flipped, push off to one side and lay your 3 pieces of bacon down to begin cooking while your egg finishes. (Do NOT increase the heat!) Once your egg is cooked, place your pepperjack cheese on top of the egg till melted and set to the side.
- Cook your bacon for about 3-4 minutes per side or until golden & crispy. Place onto a paper towel, I like to fold mine in half to make it fit nicer, and let the excess oil soak into the paper towel while the bacon is cooling.
- While the bacon cooks, slice your croissant in half – and you can do one of two things. If you like a real crisp, flaky outer croissant, toast in your toaster for a couple minutes. Other method – once your bacon is done (and the bacon grease is removed), throw a pat of butter on the pan and put your croissant inside down and let sit for 1-2 minutes to lightly toast the inside.
- Once everything is done, construct your delicious breakfast sandwich and enjoy!
