Serve as a dip, with a slotted spoon or large serving fork to avoid transferring too much watery tomato juice with your pico. 

Pico de gallo keeps well in the refrigerator, tightly covered, for up to 4 days.

Pico de Gallo vs. Salsa:

The main difference between pico de gallo and salsa is their texture and preparation.

Pico de gallo (also called salsa fresca) is a fresh, uncooked mixture of diced tomatoes, onions, cilantro, jalapeños, lime juice, and salt. It has a chunky texture and is less liquidy since the ingredients are simply chopped and mixed.

Salsa, on the other hand, can be raw or cooked and often has a thinner, more blended consistency. It can include additional ingredients like roasted tomatoes, tomatillos, or even fruit, and is usually smoother or more puréed compared to pico de gallo.

Both are delicious, but pico de gallo is bright and crisp, while salsa can have a deeper, more blended flavor.

Equipment

  • cutting board
  • sharp chopping knife
  • Large Bowl

Ingredients
  

  • 1 large tomato, diced
  • 1 jalapeno, diced
  • 1/2 red onion, diced
  • 1/2 lime, squeezed
  • 1/8 cup cilantro, chopped
  • salt + pepper, to taste

Instructions
 

  • Start by finely chopping your onion and jalapeño. Slice your lime in half and set to the side.
  • In a medium serving bowl, combine the chopped onion, jalapeño, half your freshly squeezed lime juice and salt + pepper to taste. Let it marinate for about 5 minutes while you chop the tomatoes and cilantro.
  • Add the chopped tomatoes and cilantro to your bowl and stir until combined. Taste, and add more salt if the flavors don’t quite sing.
  • To achieve the best flavor, let your mixture marinate for 15 minutes or prepare ahead of time to let it sit for several hours in the refrigerator. Serve and enjoy!
